My FaVoRiTe healthy little Oatmeal muffin...perfect for the AM hunger satisfaction on the go!

Low Fat - But totally tasty Oatmeal Bars/Muffins

These are one of my favorites and I have been making them when i stumbled on them while living out in LA, and thanks to my friendly Quaker Oats recipes online they are such a treat. I make them all the time for morning snack on the go and typically I put them in muffin sized portions instead of the recommended bars for ease of on the go snacking! Also i do not typically add the fruit that is suggested in the recipe below because they are just fabulous without it and also the dough is really addicting if you are into that kind of thing. When made into muffins they come out very dense and healthy and will last a good while if you keep the muffins in an air tight container. Be sure to not use additional oats because it will make the bars and the muffins too dry- been there before i had just a little extra in the bottom of the container and thought oh why not just use all the oats, (waste not want not), but- not a good idea- trust me! But do feel free to add whatever you like best to the recipe as it is really easy to change considering your taste preference- go crazy with different dried fruit,golden raisins, nuts, banana, chocolate, whatever makes you feel best....enjoy!


3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
One 8-ounce container vanilla or plain low-fat yogurt
2 egg whites, lightly beaten
2 Tbsp. vegetable oil
2 Tbsp. skim milk
2 tsp. vanilla
1-1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt (optional)
3 cups Quaker® Oats (quick or old fashioned, uncooked)
1 cup diced dried mixed fruit, raisins, or dried cranberries- optional

Heat oven to 350 degrees, In a large bowl combine sugars, yogurt, egg whites, oil, milk and vanilla. Mix well. In a medium bowl combine flour, baking soda, cinnamon, salt mix well. Add the flour mixture to the yogurt mixture and mix well until combined. Stir in oats and fruit (optional). If you like this recipe and want more like it check out
